On Monday, March 2, 2026, Sea Vegetable Stand will open in the Yaesu/Nihonbashi area of Tokyo, allowing customers to enjoy seaweed to the fullest! This is the first permanent store by Sea Vegetable, a company that handles all aspects of seaweed from research, production, and processing. Sea Vegetable’s first permanent restaurant, Sea Vegetable Ramen by day and a bar serving seaweed dishes and drinks by night, will offer a new dining experience that can be enjoyed not only with the sense of taste, but also with all five senses.

A must-try when you visit is the signature seaweed ramen (750 yen to 1,350 yen including tax *price varies depending on the type of seaweed and toppings), which can be enjoyed both day and night. The soup stock is made from fragrantly grilled sea bream from Amakusa, Kumamoto, and is layered with homemade “Aonori Soy Sauce” made from fermented aonori seaweed and rice malt. The noodles are made by Asakusa Kaikaro, which was chosen based on their compatibility with the broth after testing more than 20 varieties, and the aroma and texture of the five kinds of seaweed can be enjoyed in this bowl. Half-size portions are available at night, making it a perfect ending to a meal.

In the evening, the restaurant becomes a “seaweed bar,” offering a lineup of about 15 seaweed dishes and drinks each. As the seaweed used changes with the seasons, the menu changes from time to time as it is combined with seasonal fish and vegetables. The menu features a variety of dishes that allow you to enjoy the individuality of the ingredients, such as “Sea Veggie Salad” starring tosakanori and young hijiki seaweed, aromatic “Suji Aonori Potatoes,” and “Suji Aonori Burrata Cheese with Kiwi by Pizza 4P’s” using cheese from a popular restaurant that does not take reservations.

Pendant lights made of kelp greet customers as they enter the restaurant, which has an impressive seaweed-themed design. The seaweed chandelier made of chrome, maxa, and other seaweeds has a three-layered structure, and when the light falls, it creates a fantastic look as if you are looking up at the sky from underwater. The walls are made of custom tiles with seaweed mixed into the glaze. This is a space where visitors can encounter the unexpected charm of seaweed, which has long been familiar to us as a foodstuff.
